SWEET AND SAVORY KALE

2 tablespoons olive oil
½ medium onion-chopped
3 cloves garlic-minced
2 Tablespoons Dijon mustard
1 Tablespoon sugar
1 Tablespoon cider vinegar
1 ¼ cups chicken broth
1 1# bag of Nature’s Greens Kale Greens
1/3 cup dried cranberries
¼ cup sliced almonds-optional

sweet and savory kale recipeIn a large stock pot, heat olive oil on medium high heat. Add onion and garlic; sauté until onion softens stirring often about 5 minutes. Stir in mustard, sugar, cider vinegar and chicken stock. Bring to a boil on high heat. Add kale, cover, and cook 5 minutes stirring often.

Add cranberries and continue cooking on medium high heat stirring often. The liquid should reduce by about half and cranberries will get plumb in about 10 minutes. Season with salt and pepper. Sprinkle with almonds, if desired.

Serves 4-6.
