I’m on a mission to find the perfect lemon and almond butter cookies recipe.

My inspiration? Oddly, a small bag of Hannaford Taste of Inspirations Lemon & Almond Butter Cookies. Hannaford is a regional grocery chain in the Northeast that has an extensive line of store brand foods and goodies. Somehow I came across a sweet little bag of cookies…bought one for my AirBnb guests and one for myself. Sooo good! Sweet, lemony, light, and kind of surprisingly spectacular.

So, in true Pam fashion, the hunt is on. Looking for the perfect lemon almond butter cookie recipe. (Just like I did for my Morning Glory Muffins)

Lemon and Almond Butter Biscuits

Tried this one today because they looked right, the recipe called for a mixture of flour and almonds (not just almonds), and they were referred to as ‘biscuits’. (Just thought that was cool).

Followed the recipe to a T. For some reason the dough balls didn’t spread out…mine came out looking like they went in: a dough ball.

In the end, they tasted good, but the texture was not what I am looking for (even if they had spread out). They were more like deli cookies, or coffee shop cookies. Texture was crumbly and more hearty than light.

So, they are good, but a miss for me.
